Feburary 7th

Great job spinning today ladies. It's a tough workout, but you are tough women. Huge calorie burner and well worth the effort..YOU ROCK!

Molly was kind enough to bring samples of her blanched veggies and dip. We also sampled some great muffins, a smoothie and balsamic roasted chicken breast. Any of these can be great additions to your prepared food that awaits your meal or snack time to help you stay away from those bad choices we're all prone to make at times. Get prepared, be organized and you will find your level of success will improve.

Devilled Eggs;

hard boil eggs and cut lengthwise. Remove the yolks. Stuff with homemade Hummous (2 cans chickpeas in water-chk labels!- 2 cloves garlic, salt, pepper, 1 tbsp Tahina paste, juice of a lemon, 1 tbsp extra virgin olive oil. Process until smooth.

Roast Vegetables;

Cut up into equal sized pieces any of the following combination:

Red, green, yellow peppers, onions, fennel bulb, zuchini, pumpkin, sweet potato, carrots, etc. Add crushed garlic, cumin seeds or other herbs such as thyme, rosemary etc, and drizzle extra virgin olive oil on top. Toss in the roasting tray. Roast on the top shelf of a hot oven for about 20-30 mins, turning them over after half time. They should be slightly caramelised and brown.

Steamed fish in a Parcel;

Place a fish fillet onto a piece of foil. Crush some garlic on top. Sprinkle some chopped coriander and soya sauce on top. Wrap up securely and bake for about 15 mins. Serve in the foil with Steamed brown rice/barley etc and steamed PakChoi or broccoli. You can change the flavours by using different herbs, try white wine, dill or thyme, garlic, or even Thai spices. My kids love this!
